Amaranthus gangeticus, is one of the most consumed vegetables in Malaysia and most parts of Asia. This vegetable is known as bayam separuh merah in Malaysia (Figure 3.1). A. gangeticus is easy to cultivate and is high in demand due to its affordable price.
